The carpaccio is hand-cut at Roos because our carpaccio is made from raw materials without preservatives. Each slice can have a different shape, so it cannot be automatically cut.

A plate of carpaccio is such a beautiful presentation of craftsmanship.

For the beef carpaccio, we use quality meat without additives. This provides a pure taste experience with a lovely flavor and texture. We also keep the Vitello Tonnato as pure as possible and only cook it to a core temperature of 55 degrees, ensuring it remains beautifully pink.

The beetroot carpaccio is sliced from cooked beets without additives. To preserve these pure products, we freeze the carpaccio quickly to maintain the quality.
